In the foothills of the Andes in northern Ecuador, Freddy Salazar and his family own and operate the Costa Esmeraldas cacao farm.
Through impassioned attention to farming and fermentation, the Salazars are producing some of the best cacao in South America, and it shows in this delicious bar.
