In the foothills of the Andes in northern Ecuador, Freddy Salazar and his family own and operate the Costa Esmeraldas cacao farm. We have the good fortune to partner with the Salazars in our ongoing pursuit of showcasing the different terroir characteristics that can be shown through chocolate.
This bar is powerful as well as darker than most 70% bars and is a wonderful complement to the cacao we grow in Hawaii.
Through impassioned attention to farming and fermentation, the Salazars are producing some of the best cacao in South America, and it shows in this delicious bar.
